Here's an example of a recipe from the book. It's simple and fun to make.
"Meyer Lemon Shortbread"
Shortbread is a classic Irish cookie—and guess what? It’s super simple to make. Just butter, sugar, and flour. That’s it! And the texture? Ohhh my goodness. It’s so soft and crumbly it melts in your mouth like magic.
One year, I wanted to mix things up, so I added Meyer lemon juice to the dough. Meyer lemons are like the fancy cousin of regular lemons. They’re a little sweeter and a little less sour - kind of like if a lemon and a mandarin orange had a baby. Cool, right?
They grow in Louisiana, which makes them even more special to me! You can sometimes find them at Whole Foods or Trader Joe’s when they’re in season. But don’t worry if you can’t—just swap in whatever citrus you have: regular lemons, limes, tangerines, or oranges. It all works!
These cookies are perfect for tea parties, gift boxes… or sneaking one before dinner when no one’s looking.
Ingredients:
-
2 sticks unsalted butter, softened
-
1 cup confectioner’s (powdered) sugar, divided
-
4 teaspoons zested Meyer lemon peel (Make sure no white pith.)
-
¾ teaspoon Kosher salt, divided
-
2 cups all-purpose flour
-
2 tablespoons Meyer lemon juice
There’s a whole lotta love baked into the full recipe which is featured in my new book with tons more tasty magic — and I can't wait for you to try it.
Thanks for all the sweet support — you’re the best!
